  • Yam Porridge As A Delicacy

    Yam Porridge As A Delicacy

    By Enna Amobi

A quick question – is it supposed to be called “porridge” or “pottage”? Some people may call it yam pottage while others call it yam porridge. Someone could wonder if these are exactly the same or are different dishes made of yam. Lol! They are actually the same thing in the Nigerian Lingo. In the original context, that is, the context which the Europeans use, it is greatly different from our context. In the original context, ‘porridge’ is a common word used to describe the meal made from different grains and boiled in water or milk. According to the English dictionary, porridge is a dish made of grain or legumes, milk and/or water, heated and stirred and usually served as breakfast. An example of this is the oat porridge which is quite popular over there and in Nigeria too. Another question, does our yam porridge fall into this definition? LoL! A big NO!

Moving further to pottage, the English dictionary also defines it as a thick soup or stew. It is prepared from different ingredients (usually vegetables, meat, fish). This is definitely more nutritious than the porridge variant. Even in the Bible, Esau sold his birthright for a bowl of pottage. It’s that good. Hmmmmm! This is seeming like our ‘yam porridge’. From the definition, pottage is widely cooked in Nigeria and it is a main dish too. Both porridge and pottage mean the same thing in Nigeria, so, as a Nigerian, referring to any of them doesn’t make you wrong. We can call it yam porridge or yam pottage, but the most popular name is yam porridge. Another reason why I think pottage should be the right name for it is that going by the definition, a couple of ingredients are cooked together till thick in one pot. It can be said that pottage is every thick soup or stew other than a porridge. Pottage is cooked by putting in all the ingredients into a pot and allowed to cook by boiling till it is done. Grains are seldomly used or not used at all for this kind of dish.

Going by the definitions, I’ll gladly refer to this dish as yam pottage. This dish is super easy to prepare. The first time I made yam pottage, my mum brought out all the ingredients that I used, in the quantity that will be used and measured out everything. When it was time to cook, due to the fact that I was still learning how to tell the time at that point, I had to start cooking when it was 5 o’clock in the evening. All the times we ate yam pottage and still eat it is usually in the night – as dinner. In most Nigerian homes, I’m sure this is true. Yam pottage is usually for dinner. Okay, so, right now, I’m going to switch right back to ‘porridge’. Lmao! Laugh at me too. Although yam pottage is the right description, it just doesn’t sound right in my ears at all. I’m used to calling it yam porridge and that will not change anytime soon. So yam porridge it is abeg.

When it was time to cook, I just put everything in a pot and put on fire and left it to cook by boiling. I’m sure you may be wondering if I put everything, like everything? Nahhhhh! I was also instructed that the vegetable(s) come last when the yam is done and the mixture is thick. As time went by, I started measuring the ingredients by myself and also started flopping this dish. LoL! I was only allowed to cook when my dad was not around, so anyhow it turns out, we’ll eat it that way or if it was too bad, throw it away. So, sometimes, the dish was too watery, or had too much palm oil or was too salty or the yam was not soft enough. But hey, all those mistakes made me learn how to perfectly cook yam porridge.

This dish is aromatic, it has a distinctive smell. Whenever you perceive it, you know that yam porridge is cooking. Generally, the taste of yam porridge is mellow, that is, it has a gentle and smooth flavour except when you decide to make it extra spicy. It can also be savory. Every ingredient blends so well to give a tasty and palatable dish. The taste can also be altered by your choice of vegetable used at the end of the cooking, you could use ugu leaves, uziza leaves, nchanwu (scent leaves), etc. Also, the taste can be altered too by the quantity of ingredients and spices used and the taste can range from tasty to savoury to spicy and to salty (yes salty). Therefore, when cooking, you have to be careful when adding your ingredients so you don’t add extra that will spoil your dish or not add something that will enhance your dish.

    Let us cook now;

Yam is the base of this dish, that’s why it is called yam porridge. The ingredients are yam, palm oil, seasoning cubes, ground crayfish, an onion, blended fresh pepper, dried fish, smoked fish (optional), salt and ugu leaves (this is optional, or you can use any other vegetable of your choice). For this dish, you do not need so much ingredients to make a really tasty yam porridge, the basics listed above will give you a very tasty pot of porridge.

First, you prep all your ingredients. I like to get all my ingredients ready before I start cooking. It kinda makes cooking easier and faster.

You cut your yam, peel the back, wash and put in a clean pot.

Wash dried fish with warm water and salt and keep on a plate.

Peel, wash and cut onion and add to the yam in the pot.

Pick, wash and cut ugu leaves and put in a plate for when the yam is done. The quantity of the yam determines the quantity of the ugu leaves. If you feel you cut too much leaves for the yam, when you use the quantity you need, you can spread the remaining in a tray for it to dry and use it another time.

In the pot with yam (a small quantity), add 2 pairs of knorr seasoning cubes, 3-4 cooking spoons of palm oil, 2 cooking spoons of ground crayfish, 1 teaspoon of blended fresh pepper (or more if you love pepper), the cut onion, washed dried fish and ½ teaspoon salt.

Next you add water. The quantity of water should not cover the yam, you still have to see the yam even when you’ve added water. The yam in season now is still soft and doesn’t take time to cook.

After adding the right quantity of water, you cover and put on fire. This cooks by boiling for 15 – 20 minutes(or less). When it’s almost 20 minutes, you check if the yam is done by digging a fork into a piece. If it goes in smoothly, the yam is ready. When it is done, before adding the vegetable, you taste to know if more seasoning or pepper will be added, you can add if needed.

Lastly, on medium heat, you add the cut leaves and 1 more cooking spoon of crayfish, stir and leave to cook for about 2 minutes. After 2 minutes, your yam porridge is done and ready to be eaten. You can add pieces of smoked fish when it is done – amazinggggg! Do enjoy your bowl of yam porridge and please do not sell your birthright or anything for this.LoL! You can prepare one for yourself.

Dear reader, I’ll love to hear your feedback. You can send a DM on Instagram or an email via thecravefactory.ng and enaamobi98@gmail.com respectively.

  • Osinachi Nwachukwu: Premium Times remembers gospel music star one year after

Osinachi Nwachukwu: Premium Times remembers gospel music star one year after

On 8th April 2022, famous Nigerian Gospel artiste Osinachi Nwachukwu died at a hospital in Abuja.

Osinachi, as she was fondly called, gained popularity for her vocal rendition of ‘Ekueme’, a 2016 song by Prospa Ochimana.

Her death was greeted with the usual outcry but with more intensity as the victim was considered a high-profile individual.

Among those who aired strong opinions about the questionable demise of the beloved singer were Sinach, Dunsin Oyekan, Chioma Jesus, Mercy Chinwo, Lara George and many others.

The first indication that Osinachi may have been a victim of domestic abuse came when her colleague, Frank Edwards, alleged that the late singer’s husband, Peter Nwachukwu, regularly brutalised her before she died.

Mr Edwards made the remarks in an Instagram live video. According to him, on several occasions, the late Osinachi’s husband was in the habit of publicly insulting his wife, and he abused her on several occasions.

Recounting an encounter with the singer, he said, “One time in a studio, this man slapped her just because she wanted to record the song in Igbo against his will. She does not do anything on her own.”

“She would say, please beg my husband. She was at his mercy. I didn’t know the intensity of what she was going through; I didn’t know how somebody would be jealous of their wife or claim to love.”

Mr Edwards also alleged that the late singer’s husband was controlling and would take the money she made from events.

    Denial, litigation

Following her untimely demise, the Attorney-General of the Federation filed 23-count charges against Mr Nwachukwu.

He was charged under Sections 104 and 379 of the Administration of Criminal Justice Act, 2015 and culpable homicide contrary to section 221 of the Penal Code, which is punishable with death.

Mr Nwachukwu, however, said his wife died from lung cancer. Contrary to public opinion, he also claimed that he never hit his late wife.

The father-of-four said this statement while being escorted to the courtroom in Abuja High Court for arraignment.

He said: “Let me tell the whole world, I have suffered a lot. I have been abandoned. What killed my wife was cancer of the lungs; I didn’t hit my wife. Cancer of the lungs killed my wife, Osinachi Nwachukwu, so I’m suffering for what I do not know”!

One year after her tragic demise, the trial of Mr Nwachukwu is still before Justice Njideka Nwosu of the Federal Capital Territory High Court, Wuse, Abuja. At the same time, Mr Nwachukwu is still remanded in Kuje prison.

In October 2022, two employees of the late gospel singer, Adetunji Moses, her former personal assistant and Blessing Iyamabe, told a Federal Capital Territory High Court in Abuja that her husband, Peter Nwachukwu, verbally and physically abused her.

A neighbour of the late gospel singer Osinachi also told the Court that the singer, on several occasions, begged her not to report her husband’s abuse.

The last hearing was in January when more aides of the late singer who worked closely with Osinachi and an Investigative Police Officer, IPO, testified before the court.

The next hearing comes up on the 2nd of May, where Mr Nwachukwu is expected to open his defence.

    Outcry vs quietude

One year after her demise, the world, especially her colleagues in the ministry, appear to have moved on.

In the days and weeks that followed her demise, the Nigerian religious and marriage atmosphere was rife with hot takes about domestic violence.

For the first time, it seemed like the preachers were beginning to favour divorce or separation in cases of domestic abuse as against the ‘indoctrinated’ ‘For Better For Worse’ mantra that guides Christian marriages.

Gospel Singer Dunsin Oyekan advised Christians to speak up when going through abuse.

Reacting to the late Osinachi’s demise, Mr Oyekan wrote, “We must all learn not to keep things that we are passing through away from people who can help. Friends, please speak up! It is well.”

Zona Strings made a reel of himself painting the songstress using a belt, symbolising domestic violence.

Her funeral was emotionally charged with tributes from her industry colleagues.

However, on the anniversary of her demise, the tributes dried up. Except for a few fans on social media, Osinachi has been forgotten, except for the occasional hearings in court.

The quietness was such that one of her famous colleagues hosted a concert on the weekend of the anniversary of her death without as much as a tribute.

Osinachi was the twin sister of the famous singer Amarachi Eze. She was a lead singer at the Dunamis International Gospel Centre.

She also featured in several popular gospel songs like “Nara Ekele” by Pastor Paul Enenche (Dunamis, Abuja) and “You no dey use me play” by Emma.

Osinachi, whose Husband and four children survive, released her last song, ‘Ikem (God of Power)’ in November 2021.

Her twin Amarachi Eze in an appreciation post on her official Facebook page revealed that Pastor Paul and Becky Enenche of Dunamis International Gospel Centre awarded her four kids a scholarship.

Ms Eze also said the cleric promised to assist with their welfare up to the university level.

  • Torrent of Tributes Pour in From Eminent Nigerians as Bola Ajibola, 89, is Buried in Abeokuta

Torrent of Tributes Pour in From Eminent Nigerians as Bola Ajibola, 89, is Buried in Abeokuta

He was a former president of Nigerian Bar Association, a former High Commissioners to the UK, one time judge at the International Court of Justice at the Hague, and erstwhile Attorney-General of the Federation.

A torrent of tributes poured in from prominent Nigerians in honour of one of Nigeria’s foremost legal mights, a former president of Nigerian Bar Association (NBA) 1984-1985, former High Commissioners to the United Kingdom, one time judge at the International Court of Justice at the Hague, and erstwhile Attorney-General of the Federation (AGF) and Minister of Justice, Prince Bola Ajibola, who died on Sunday at the age of 89. He was immediately buried in Abeokuta in line with Islamic rites.

Ajibola’s death attracted many statements of condolence from far and near, while some paid their last respects to the deceased’s family at his Abeokuta home.

Among prominent Nigerians, who paid tribute to the dead were President Muhammadu Buhari, former President Olusegun Obasanjo, former military president, General Ibrahim Babangida, and President-elect Biola Tinubu.

Others included the vice president, Professor Yemi Osinbajo; former Vice President Atiku Abubakar; Senate President Ahmad Lawan; the chief mourner and governor of Ogun State, Dapo Abiodun; Lagos State Governor Babajide Sanwo-Olu; and former Ogun State governor, Aremo Olusegun Osoba.

Ajibola, who died in the early hours of yesterday following old age-related ailments, according to his family, was buried after Janazah prayer led by Chief Imam of Egbaland, Sheik Sa’dallah Bamgbola. His remains were interred within the sprawling Islamic Mission for Africa (IMA) premises, a centre he established decades ago on Abiola Way, in Abeokuta, the state capital.

Osinbajo, Obasanjo, Osoba, Deputy Governor of Ogun State, Noimot Salako-Oyedele, and Chief Judge of Ogun State, Justice Mosunmola Dipeolu, were among those, who attended the burial in Abeokuta.

Buhari, while commiserating with the legal community in Nigeria and worldwide, noted in a release issued by his media adviser, Femi Adesina, that the outstanding lawyer and eminent jurist used his God-given knowledge, intellect, and talent to advocate for justice, fairness, and equity in all his undertakings within and outside Nigeria.

The president said the late Ajibola, having risen to the pinnacle of his career, took his brilliance in law practice to the International Court of Justice at The Hague, where he served between 1991 and 1994.

“His contributions to the development of our legal system cannot be overstated, serving as the Attorney General and Minister of Justice at a critical period in the nation’s history,” the president stated. “His patriotic inclinations, integrity and passion for service and advancement of humanity will continue to resonate after him,” he added.

Buhari also sympathised with the government and people of Ogun State as they mourned the illustrious citizen for the educational and social development he brought to his community and environs. The president prayed the Almighty to grant Ajibola Aljannah.

Babangida, in a statement he personally signed, said, “I feel a deep sense of pain on hearing the news of the sudden demise of our former Attorney-General, Prince Bola Ajibola: a great Nigerian, an unimpeachable patriot, a sound legal mind, humanist, and a quintessential legal luminary of global reputation. His death, no doubt, marked the end of an eventful career of an exceptional Nigerian, whose love for country was total.

“As a government, when we tried to appoint Prince Ajibola as Attorney-General of the Federation, there were certain persons, who cautioned us against it, saying the late Prince was a controversial personality, who would give us a headache. I insisted that was the more reason why we should appoint him; with the hope that he would guide us on the path of law and reason, and not sentiments; which he did.

“As a true Nigerian patriot, throughout his service to the nation, he refused to receive a salary. He served our nation pro-bono. He was very passionate about the place of Nigeria in the comity of nations. There was never a day he asked to be paid his salaries during and/or after his meritorious service to the nation. Prince Bola Ajibola is an exceptional patriot of repute.

“At 89, he lived his full circle. His sound knowledge of law and the legal profession was legendary. He was a man with robust ideas about governance. He shaped the direction of our government and contributed in no small measure to deepening our body of laws. He was friendly, engaging, and selfless. He was a great mind whose love for country is remarkably worthy of emulation. I will personally miss this great Nigerian, who gave us a lot of ideas on how to lead our country.”

Tinubu expressed sadness over Ajibola’s demise, in a statement signed by Mr. Tunde Rahman. He sent his condolences to the family of the legal luminary and founder of Crescent University, Abeokuta.

The president-elect also acknowledged Ajibola’s important contributions to Nigeria’s political evolution and nation-building, legal profession, and international jurisprudence, saying, “I received the news of the passing, on Sunday, of Prince Bola Ajibola, SAN, at 89, with profound sadness.

“The former Nigerian Minister of Justice and leader of the Bar was an eminent statesman and legal icon, whose contributions to national progress and development will be written in gold.

“During his earthly sojourn, Prince Ajibola didn’t just serve his country with his gift of extraordinary brilliance as a lawyer, he served the world as a judge of International Court of Justice in The Hague and Member of its Permanent Court of Arbitration (PCA).”

Osinbajo, who arrived the burial venue about 4.57pm, spoke with newsmen in Abeokuta and said his personal interaction with Ajibola as Special Adviser, would be indelible in his heart.

The vice president said, “Prince Bola Ajibola was someone I worked with as a special adviser, when he was federal attorney general and one thing he demonstrated was his belief in Nigeria, and that one could serve in the public domain with integrity.

“I am sad that he is no more. As Segun, his first born, has said, ‘I am actually his first-born. It’s a great honour that I knew him and he mentored me.”

Abiodun ddescribed the Ajibola’s death as a big loss to the judiciary, and said his legacies in the judiciary, philanthropy, and the educational development of Nigeria would never be forgotten.

The Ogun State governor commiserated with the Owu Royal Family, his friend, Obasanjo, and members of the Baptist Boys’ High School Old Students Association. He said Ajibola’s death was saddening, devastating, and the end of an era.

Abiodun, in a statement by his Chief Press Secretary, Kunle Somorin, said, “The death of this illustrious son of Ogun State, a celebrated jurist and judicial activist, public intellectual and elder statesman, is a severe blow to all of us, who knew him.

“Words cannot adequately convey my heartfelt sorrow over Papa’s death, for he was a kind and beautiful soul, who spread love to all who encountered him.” Secretary to the Government of the Federation (SGF)/Chairman, Presidential Transition Council (PTC), Mr Boss Mustapha, also reacted to the news of Ajibola’s death on behalf of the Federal Executive Council (FEC).

In a statement by Director, Information, Office of the Secretary to the Government of the Federation, Willie Bassey, the SGF chronicled Ajibola’s contributions to the development of the legal profession, both locally and internationally. He described the deceased as a respectable judge who served at home as Attorney General of the Federation and Minister of Justice, as well as Judge at the International Criminal Court (ICC) at The Hague, Netherlands, from 1999-1994.

Mustapha stated, “Ajibola also contributed to the development of Nigeria’s educational sector as founder of Crescent University, Abeokuta, Ogun State. He was also a diplomat of repute, having served as Nigeria’s High Commissioner to the United Kingdom from 1999-2002.

“FEC condoles with the government and people of Ogun State, family and friends of the deceased, and prays to God to grant him Aljanah Firdaus.”

Atiku, in a tribute he signed, said, “It is with a heart filled with pain, but with gratitude to the Almighty, that I share my condolences about the passing of Prince Bola Ajibola.

“Pain because there are only a few Nigerians, who grew in status to the heights of the Prince from a noble Egba family. I am happy in another way because, being a Muslim myself, I am certain that Prince Ajibola would, himself, have elected to make his passing in the glorious month of Ramadan.”

The former vice president said there were many things to remember Ajibola for, adding, “That he was a doyen of the law profession and his accomplishments as a jurist of note is the most basic of the things that we shall tell of his memories. Of course, he did the country proud, when he served at the International Court of Justice at The Hague, as well as during his years of service as Nigeria’s envoy to the United Kingdom.

“But what was spectacular about the late eminent jurist was how his values of forthrightness and candour, which, by the way, is emblematic of his Egba heritage, reflected in all other spheres of his earthly engagements.

“As a diplomat, jurist, educationist – or any other role that you may wish to describe the late Prince Bola Ajibola – what is consistent about his character is the overwhelming presence of rectitude and forbearance in every of his endeavours.

“Those two qualities of his personality are the secret codes to his achievements in life. I am sure that they are qualities that his family and friends will be proud of, and we should immortalise in memory of him.

“Prince Ajibola was always at peace with his Creator and fellow humans, when he was at this side of the divide, and the legacies of his lifetime should be a beacon that should call younger Nigerians to an exemplary life that he lived.”

Lawan and Chief Whip of the Senate, Orji Kalu, also condoled with the family of Ajibola.

Lawan described the late elder statesman as an erudite lawyer and international jurist, who left bold imprints on the study and practice of law both within and outside Nigeria. He noted that as former President of the Nigerian Bar Association (NBA), and one time Judge of the International Court of Justice (ICJ), the late Ajibola impacted tremendously his legal profession and will not be forgotten.

Kalu, a former governor of Abia State, while commiserating with the government and people of Ogun State, extolled Ajibola’s virtues. He stated that the late jurist was forthright, bold, courageous and patriotic.

Sanwo-Olu described Ajibola’s death as a big loss to the legal profession, the education sector, Ogun State, and Nigeria as a whole, saying he served his country and the world meritoriously at different levels.

In a condolence message by his Chief Press Secretary, Mr. Gboyega Akosile, Sanwo-Olu commended the ex-ICJ judge for his legacies, sacrifice and dedication to nation building and service to mankind.

The governor praised Ajibola’s contribution to the judiciary and education sector as a lawyer, World Court Judge, and founder of one of the foremost private universities in Nigeria, Crescent University, Abeokuta.

He stated, “On behalf of the government and people of Lagos State, I want to express my sincere condolences to the family, friends and associates of Prince Bola Ajibola on the demise of our elder statesman and renowned jurist.

“Prince Ajibola lived a fulfilled life, having made positive impacts during his lifetime. The elderly and wise counsel of the jurist will be sorely missed, not only by his family, but the entire people of Owu Kingdom and Ogun State, where he played active roles in its development for many years before he passed on.

“I want to urge the late Prince Bola Ajibola’s family, friends, judiciary and education sectors and the entire people of Owu Kingdom to immortalise the good name of the late lawyer and educationist. I pray that God will grant him eternal rest and give his immediate family, friends and the people of Ogun State the fortitude to bear the irreparable loss.”

Osoba described the late Ajibola as a passionate personality, whose interest in education and law could not be rivalled. He noted that Ajibola had to sell almost all his properties to set up a university, when the burden to contribute to the development of education in the country was rife.

“Ajibola was a thorough prince of Egbaland, who believed in the legacies of our forefathers,” Osoba said, adding, “He invested everything he had into education and law in Egbaland, Nigeria and the world as judge of the world court in The Hague. We will miss him.”

  • UNESCO names Senegal as the true home of Jollof Rice over Ghana and Nigeria

Jollof rice is usually served with chicken

UNESCO has officially recognised Senegal as the origin of Jollof rice, also known as Ceebu jën in Senegal, settling a long-standing debate between West African nations Ghana, Nigeria and Senegal. The dish, which is a staple in West African cuisine, is made of rice and fish, accompanied by vegetables and sometimes tomatoes.

According to research by The Conversation Africa, the origins of Jollof rice can be traced back to the entrenchment of colonial rule in West Africa between 1860 and 1940. During this period, French colonizers replaced food crops with broken rice imported from Indochina. Over time, broken rice became more prized by the Senegalese than whole rice grain and the dish known as Ceebu jën was born.

Jollof rice (called Ceebu jën in Senegal according to the Wolof spelling)

The dish has become a source of pride and cultural identity for the Senegalese and has been recognised as an intangible heritage of humanity by UNESCO. This certification is expected to positively impact the economy, particularly in tourism, agriculture, fishing and catering.

In addition to its cultural significance, Jollof rice is also closely linked to a particular way of life and the consumption of the dish is strongly linked to ceremonial events and the aesthetics of presentation and service. The women of Saint Louis, a port city in northern Senegal, are known for their remarkable know-how in this area and have been credited with adding finesse and elegance to the dish.

The Senegalese version of Jollof rice, Ceebu jën, is now officially recognised by UNESCO as an intangible heritage of humanity, putting an end to the ongoing debate over its origins and solidifying Senegal’s claim as the true home of Jollof rice.

  • TOURISM: Owerre-Ezukala Cave and Waterfall

    By Chime, Abumchukwu Chinedu

Media Handle (Facebook, Twitter, Instagram and Youtube): Ou Travel and Tour

My visit to Owerre-Ezukala Cave and Waterfall in Iyiafor Owerre-Ezukala, Orumba South, Anambra State is one that remains fresh in my mind with lots of nostalgia. The waterfall is one of the biggest in Nigeria.

It is located in a forest area of the village bordered by Imo, Enugu and Abia.

The water falling from the big, tall cliff to splash on you while you are standing under it brings a refreshing excitement, but this is best done after you have toured the caves within and under the cliff, from one cavity tunneling into another to create a thrilling network of three chambers within it. As we move within the cave with a torch or a lantern, it brings a certain enthralling feeling of the old that enchants you so much, you wouldn’t want to leave no more.

Aside the tall waterfall, which is one of the tallest waterfalls in Nigeria, there is another smaller waterfall in the upper chamber of the cliff, and other amazing rocky water canals that can enchant your sight to a fix, as it did to me. You find yourself, like I did, embraced by that soothing warmth of nature. In addition to this, the people living around the village are open and welcoming.

Owerre-Ezukala Cave and Waterfall is a site worth visiting in Orumba South, Anambra State.
